how long will it take one person to set up?

You really need 2 people, my daughter and I set it up in about 20 to 30 minutes

HOW DOES THIS FOLD UP TO MOVE?

The vinyl folds up and goes into bags that I still have the upper polls come apart and go into bags for easy handling. The bottom stays connected and folds up like an accordion the counters also go in bags the bottom that folds up does not go in a bag

How does it knock down, pack up and get transported to another venue ?

I hauled it in a trailer.
