I think oven is 4yrs old. We drove it from Las Vegas when we bought it 2 yrs ago. The truck is in Great Mechanical condition

If you mean, is the oven a hybrid? then no, it is only a wood fired oven. There is a propane tank used for the hot water heater
Would you have to remove the pizza oven in order to take out or replace any of the other equipment?

No. Engine and trans in great shape.
How strong is the engine?
Engine is fine. Trans is geared more for torque and heavy duty since truck was former heavy steel tool truck

1-2 hours for true Neapolitan heat used daily. 2+ from cold start
Do you have any experience with using the truck in freezing temperatures...are the pipes insulated well enough to withstand freezing temperatures?
Truck was kept in garage so that when we operated in winter that as long as faucet was used every 15 min or so we could prevent freezing in lines for a 5-6 hr operation. We have operated at temps in teens but that is its own challenge for employees
