Does it have room under hood to add fryers? so another hood doesn't need to be added.
Yes. The hood 4 sections that can run independently, 2 speeds run from the steaming table all the way back on the starboard side. You have about 4 feet of flat top space where the convection oven sits. You could place electric fryers there; stainless top. The gas runs directly under this space to and from the stove top burners in the rear to the grill, flat top and steam table. Gas hookup access would be an easy adjustment.
Can fryers be added to truck?
There is room in back . Plenty. Electric outlets plenty.
How would you add a smoker to this rig?
Afraid that wouldn’t be judicious. Just not practical, I hate to say. Your kitchen is fully geared up in stainless. Smoker would take too much room. Sorry.

Not certain; the truck is very heavy with all heavy duty stainless equipment on inside. Never had weight restriction concerns; heavy enough never to chain up in mountains ice and snow.

No, driver only. Very roomy
Is the "chef base" a freezer or refrigerator and where is it located in pictures?
Standup True refridgerator behind driver. Sandwich board with True refrigerator is directly to the rear of standup, same side. No freezer.
