Would I only be able to use 10 lb bags? Is there a way to program it for 7 lb bags?

Yes, you can request company to program to meet your specification for weight and prices

The lettering on door says $2.50. Will it be able to adjust how much I want to charge per bag?

You can change prices by sending an email to Vendnation company. You will need to remove the decal if it is different price.

Is there a way this machine is protected from theft once the door is open?

The only way is using a credit card to open and take a bag, or more will charge based on the weight and will lock once the sale is complete. Thieves cannot break powerful magnetic doors. Very rare if someone swipe a card and open door to hold taking few bags and replace with anything like log or rock to replenish the bags taken out and charge less or zero if matching the same amount of weight taken and put back in. Very smart icebox.
