How many pizzas can the pizza oven get out in an hour?

The oven is a full size commercial oven. Neapolitan pizza cooks in 60-90 seconds and the oven can hold more than 3 pizzas at a time (depending on skill level of pizzaiolo). Therfore, a skilled operator should be able to produce more than 60/hour.

How many people can fit inside?

The interior of the trailer is just under 8 feet in width. The length is approximately 13 feet in length. So upwards of 5 people can fit on the interior of the trailer. The trailer was designed with three primary "stations" The forward window was designed for a cashier and for taking orders. The order ticket moves from the cashier to the pizza prep table where the pizzaiolo opens the dough and stuffs the pizza. Then the pizza is slid onto the peel and placed in the oven by the second pizzaiolo. Finally, after the pizza is cooked it is boxed and given to the customer via the large aft window.

While more than five people can fit in the trailer, I would prefer to operate it with one cashier and two skilled pizzaiolos. However, the number of crewmembers depends upon the owner's preferences and the final product.
