7200 is the weight load as it is now. According to a scale at the truck station. Hope this helps
Would the current set up support a fryer?
You can place a counter top fryer next to the flat top grill instead of the food warmer. You can certainly modify by cutting part of the platform for standing fryer. Another area I can think of is where the ice bin is located.
Are there any other known issues beside the refrigerator and hot water heater?
Everything else is good to go.
Has the trailer passed inspection?
Yes, it has passed fire and health inspection for the four years I operated the unit.
