Seller Description:

I purchased the Modena 120 (48") Forno Bravo oven and had it built on the trailer in April of this year. Business has gone so well this year that I am going to purchase an enclosed trailer and sell pizzas several days each week!
I customed designed how this oven was assembled. I was interested in one primary thing: Heat retention. I got what I asked for, this is a heat holding beast! The Modena has a 4" dome. Above that, this oven has a structure covered with stucco, in the cavity between the oven and the top is several inches of perlite. I can run the oven for several hours at 800 degrees and the outside never gets warmer than the heat from the sun. Under the 2" fire bricks is 4 1/2" of concrete and below that is insulation blocks. Think of these as your cooking fuel. Once they get hot, you keep them so with a very small fire. You DO NOT want to cook with fire. It is too uneven, it is too unpredictable. The retained heat radiates out and is a "soft", even heat. Very gentle, very predictable. This is what you want in a brick oven. So whether you are cooking pizza, wings, steak, fish, roast, potatoes, bread - whatever, you are going to be successful with this oven. Remember, you can cook anything in a wood fired oven that you can cook in a conventional oven - only better!
I was warned repeatedly to expect cracks in the oven, but I have only noticed a couple of small ones and they are in areas that will not impact its proformance. I did catch a speed bump with the bottom of the jack. I straightened it and have shemmed with washers to make it plumb. It works well. However a new jack is only $30 online. There is some minor dings from the roads I have travelled, but nothing that is unexpected. This oven is solid and is going to give you years of service.
